High Tea in Singapore: A Black and Gold Afternoon at MO BAR, Mandarin Oriental

In celebration of MO BAR turning one in September, discover a new Black and Gold afternoon high tea in Singapore from 1 September to 31 October 2019.

Inspired by the bar’s contemporary interior with black and gold accents, you can look forward to savoury and sweet pastries and snacks that pair perfectly well with MO BAR’s exclusive selection of TWG Teas. They recommend going with the delicate Malacca Gold BOP TWG Tea which I must say is a great choice.

Befitting of the bar’s luxe vibe, start your high tea by uncovering a golden tin teemed with jewels of coffee spheres that look just like caviar. Made using a molecular gastronomy technique, the coffee speheres’ bold aromatic taste is balanced by the velvety pear puree. This one is for those who love their coffee.

Using ingredients from Japan and a fine reflection of the sophisticated cherry-picked décor, don’t miss the Cured and Smoked Hamachi topped over a seaweed rice cracker and freshly baked Black Sesame Scones paired with jam or marmalade. Another highlight of this high tea is the mini Boston Lobster Roll that comes in a delightful charcoal bun.

The black and gold theme continues in the desserts. Decadent and punctuated with caramelised peanuts, Chocolate Pâte Sablée is made with Pastry Chef Desmond Lee’s Co-Ka-Me 68.5% chocolate. Absolutely divine!

While Dulcey Puffed Rice topped with a chocolate caramelised banana sphere offers a sweet edge, Citrus Confit with Yuzu Cream delivers punchy zesty notes. Not discounting the Black Sesame Sponge cake with coconut soft ganache which was equally delicious. Overall, the desserts were not too sweet and with a little bit of pacing, quite easy to indulge in.

This high tea experience can also be enjoyed as part of a new Anniversary Time package, comprising accommodation at Mandarin Oriental Singapore, welcome amenities courtesy of MO BAR, and a cocktail making session for two with Bar Manager Michele Mariotti.
